Spicy Pineapple Margarita Mocktail

Ingredients
  

  • 1/2 Fresh Pineapple (to yield about 1 cup juice)
  • 1/2 cup Coconut Water (or sparkling water for fizz)
  • 2 tbsp Fresh Lime Juice (about 1 lime)
  • 2 tsp Agave (optional, for sweetness)
  • Ice for serving)
  • Pineapple & Lime Wedges (for garnish)
  • Spicy Coconut Salt (for the rim—see recipe below)

Method
 

Step 1 : Juice Your Pineapple
  1. Prepare the pineapple: Remove the top and bottom of the pineapple, then slice off the skin. Cut the flesh into chunks, discarding the core.
  2. Juicer Method: Add pineapple chunks to your juicer and extract the juice. Strain if needed for a smoother texture.
  3. Blender Method (if no juicer): Blend the pineapple chunks until smooth, then strain through a fine mesh sieve or cheesecloth to remove the pulp.
  4. Measure the juice: You should have about 1 cup of fresh pineapple juice.
Step 2: Rim the Glasses
  1. Run a lime wedge around the rim of each glass.
  2. Dip into Spicy Coconut Chili Salt (recipe below).
Step 3: Make the Drink
  1. Muddle the jalapeños with lime juice and agave in a shaker to release the spice.
  2. Add the fresh pineapple juice and coconut water to the shaker. Shake well.
  3. Strain out the jalapeño slices (or leave them in for extra spice!) and pour over ice in the prepared glasses.
Step 4: Garnish & Enjoy
  1. Add a pineapple wedge or lime slice for the perfect tropical touch.
  2. Sip & enjoy the island vibes!
