Method
Step 1 : Juice Your Pineapple
- Prepare the pineapple: Remove the top and bottom of the pineapple, then slice off the skin. Cut the flesh into chunks, discarding the core.
- Juicer Method: Add pineapple chunks to your juicer and extract the juice. Strain if needed for a smoother texture.
- Blender Method (if no juicer): Blend the pineapple chunks until smooth, then strain through a fine mesh sieve or cheesecloth to remove the pulp.
- Measure the juice: You should have about 1 cup of fresh pineapple juice.
Step 2: Rim the Glasses
- Run a lime wedge around the rim of each glass.
- Dip into Spicy Coconut Chili Salt (recipe below).
Step 3: Make the Drink
- Muddle the jalapeños with lime juice and agave in a shaker to release the spice.
- Add the fresh pineapple juice and coconut water to the shaker. Shake well.
- Strain out the jalapeño slices (or leave them in for extra spice!) and pour over ice in the prepared glasses.
Step 4: Garnish & Enjoy
- Add a pineapple wedge or lime slice for the perfect tropical touch.
